Brownies with dried mango slices and salted pistachios.
Makes about 12.
200 g baking chocolate
100 g butter
80 g sugar
1 sachet vanilla sugar
75 g flour
50 g dried mango slices
150 g roasted and salted pistachios
Preheat the oven to 180 °C using top and bottom heat (fan 160 °C). Line a brownie tin (approx. 22 x 22 cm) with baking paper.
Coarsely chop the baking chocolate, melt in a pan with the butter and allow to cool slightly.
Finely dice the dried mango slices and shell the pistachios. .
Using a hand mixer, beat the eggs, sugar and vanilla sugar in a bowl until light and frothy. Stir in the melted chocolate and add the flour, diced mango and pistachios. Mix briefly to form a smooth batter.
Transfer the mixture to the prepared tin, spread it out evenly and bake for approx. 15 mins. in the centre of the preheated oven.
Remove the brownie tin from the oven, cut the brownies into squares while still warm and leave to cool in the tin.
